- 2 tbsp. canola oil
- 3 cloves garlic (minced)
- 2 tsp. fresh minced ginger
- 8 ounces of mushrooms (cleaned and sliced)
- 3 tbsp gluten-free oyster sauce
- 1 pound chicken breast (thinly sliced)
- 1 tbsp sesame oil
- 1 tbsp gluten-free soy sauce
- 1/4 cup scallions (thinly sliced)

Directions
Take a large skillet or wok and heat 1 tbsp of canola oil in it over medium-high heat.
Add mushrooms and fry for 1-2 minutes until they release their juice and become tender. Take a small bowl and pour the mushrooms into it. Set aside.
Now increase the heat under the skillet and light brown garlic in the remaining 1 tbsp of canola oil.
Add garlic and chicken and cook for 2-3 minutes. Add mushrooms, gluten-free soy sauce, and gluten-free oyster sauce, and cook for 1-2 minutes.
Your Stir Fry Chicken with Gluten-free Oyster Sauce is ready! Remove from the heat, and stir in 1 tbsp sesame oil and scallions. Serve hot!
