For Marinated Chicken

  • 5 oz boneless, skinless chicken
  • 1 tsp toasted sesame oil
  • 1 tbsp soy sauce
  • 1 tsp rice bran or grapeseed oil

For Fried Rice

  • ⅓ cup rice bran or grapeseed oil
  • 2 cloves garlic
  • 5 large red Asian shallots
  • 3 to 4 cups cooked white rice
  • 2 tsp shrimp paste
  • 1 tbsp red serrano or cayenne chilies
  • 2 tbsp soy sauce

Directions

Take a small bowl and combine chicken with sesame oil, soy sauce, and oil. Mix well to coat the chicken. Let it marinate for 2 to 3 hours.

Your Malaysian Fried Rice are ready. Remove them from the heat and serve with fried eggs, spring onions, prawn crackers, cucumber, tomato wedges, and lime wedges.
