- 40g carrot
- 30g green pepper
- 20g onion
- 5 piece dry mushrooms
- 2 roots scallion
- 2 eggs, beaten
- 400 g egg noodles

- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 3 tbsp cooking oil
- 2 tsp sugar
- 1 tsp sesame oi, to taste

Directions
Shred the carrot, green pepper, onion, divide the scallion into white and green part then cut into sections. Soak the dry mushrooms in water for 15 minutes, drian and cut into shreds.
Heat the pan with cooking oil, swirling the pan so that the beaten eggs form a thin pancake, then remove and shred.
Cook egg noodles with cooking oil and salt in boiling water, rinse with cold to keep the elasticity of noodles then drain the noodles.
Heat the pan again and add more cooking oil. Once the oil is shimmering, add the noodles, just prodding and moving the noodles occasionally, let it get nice and crispy.
Add in light soy sauce, dark soy sauce sugar and oyster sauce, stir well with noodles. When the noodles are well colored, you can remove the noodles and set aside.
Heat the pan again with oil, add in shredded mushrooms to fry until fragrant, add in shredded carrots and onion to stir fry slightly, then add in shredded green pepper and white part of scallion to stir fry for one more minute.
Add in noodles and stir fry together with a spatula and chopsticks, lastly, add in egg shreds and green part of scallion to stir well. Finished!
