- 5 oz boneless, skinless chicken
- 1 tsp toasted sesame oil
- 1 tbsp soy sauce
- 1 tsp rice bran or grapeseed oil
For Fried Rice
- ⅓ cup rice bran or grapeseed oil
- 2 cloves garlic
- 5 large red Asian shallots
- 3 to 4 cups cooked white rice
- 2 tsp shrimp paste
- 1 tbsp red serrano or cayenne chilies
- 2 tbsp soy sauce

Directions
Take a small bowl and combine chicken with sesame oil, soy sauce, and oil. Mix well to coat the chicken. Let it marinate for 2 to 3 hours.
Take a large wok or skillet and heat oil in it over medium-low heat. Add 3 shallots and stir fry until golden brown (approximately 5 to 10 minutes). Keep the oil in the skillet and transfer the shallots to a paper towel to drain.
Stir fry chicken in the same skillet for 2 to 3 minutes on medium-high heat until it is cooked through. Then transfer the chicken to the plate and add 2 shallots and garlic to the skillet.
Cook shallots for 30 seconds until the garlic starts to golden brown. Now add shrimp paste or oyster sauce and stir fry for 30 more seconds.
